  1. Crack the egg into a fine-mesh circular strainer. Swirl it around to drain off the liquid part of the white, using your finger to rub off any excess loose egg whites that drop through.
  2. Using the strainer, place the egg into 180 water for 4 minutes, swirling occasionally.
  3. Plate and serve.
